Flour, bread
1 cup bread flour = 1 cup all purpose flour

Flour, cake flour
1 cup cake flour = 1 cup minus 2 tablespoons all-purpose flour
or
1 cup cake flour = 3/4 cup all purpose flour plus 2 tablespoons cornstarch

Flour, pastry
2 cups pastry flour = 1 1/3 cup all purpose flour plus 2/3 cup cake flour

Flour, self-rising flour
1 cup self rising flour = 1 cup all-purpose flour plus 1 1/2 teaspoons baking powder and 1/2 teaspoon salt

Flour, whole wheat
1 cup whole wheat = 7/8 cup all purpose flour plus 2 tablespoon wheat germ
or
1 cup whole wheat = 1 cup graham flour

Ghee
1 tablespoon ghee = 1 tablespoon clarified butter
or
1 tablespoon ghee = 1 tablespoon vegetable oil

Ginger, ground
1 teaspoon ground ginger = 1/2 teaspoon ground mace plus 1/2 teaspoon grated lemon peel
or
1 teaspoon ground ginger = equal amount of allspice
or
1 teaspoon ground ginger = equal amount of cinnamon
or
1 teaspoon ground ginger = equal amount of mace
or
1 teaspoon ground ginger = equal amount of nutmeg

Glucose, liquid
1/2 cup liquid glucose = 1/2 cup light corn syrup

Heavy Cream
Heavy Cream = Equal amount of All Purpose Cream

For recipes that require whipping cream such as Tiramisu and Chocolate Mousse, Jacklyn simply uses all purpose cream because it accomplishes the same job as heavy or whipped cream.

 

Herbs
1 Tablespoon fresh herbs = 1 teaspoon dried equivalent of the same type of herb

Italian Seasoning
1 1/2 teaspoons Italian seasoning = blend of any of these: fresh basil, oregano, rosemary, and ground red pepper
or
1 1/2 teaspoons Italian seasoning = 1/4 teaspoon EACH of dried oregano leaves, dried marjoram leaves and dried basil leaves plus 1/8 teaspoon rubbed dried sage can be substituted

Ketchup
Ketchup = 1 cup tomato sauce plus ½ cup sugar and 2 tablespoons cooking vinegar

Lard
1/2 cup lard = 1/2 cup solid vegetable shortening
or
1/2 cup lard = 1/2 cup plus 1 tablespoon unsalted butter

Lemon Grass
Lemon Grass = Equal amount of Lemon Zest

Lanie uses lemon zest instead of lemon grass because it is so much easier to find and prepare.

Lemon Juice, freshly squeeze
1 tablespoon freshly squeezed lemon juice = 1 tablespoon bottled lemon juice
or
1 tablespoon freshly squeezed lemon juice = 1 tablespoon fresh lime juice
or
1 tablespoon freshly squeezed lemon juice = 1 tablespoon fresh calamansi juice

Lemon, zest
1 teaspoon lemon zest = 1 teaspoon orange or lime zest
or
1 teaspoon lemon zest = 1/2 teaspoon lemon extract

Lime Juice, freshly squeezed
1 tablespoon freshly squeezed lime juice = 1 tablespoon lemon
or
1 tablespoon orange juice
or
½  tablespoon calamansi juice

Lime, zest
1 teaspoon zest of lime = 1 teaspoon lemon zest
or
1 teaspoon zest of lime = 1 teaspoon orange zest

Lime or Lemon
Lime = equal amount of calamansi
