Mace
Mace = equal amount of allspice; cinnamon; ginger; or nutmeg

Maple syrup
1 cup maple syrup = 1 cup honey
or
1 cup maple syrup = 3/4 cup corn syrup plus 1/4 cup butter

Margarine
1/2 cup margarine = 1/2 cup salted
or
1/2 cup margarine = unsalted butter
or
1/2 cup margarine = 1/2 cup solid vegetable shortening

Marshmallows
8 regular marshmallows= 1 cup miniature marshmallows
or
8 regular marshmallows= 2.5 ounces marshmallow cream

Marzipan
2 1/2 cups marzipan = 2 cups almond paste plus 1 cup powdered sugar plus 2 tablespoons light corn syrup

Mascarpone cheese
1 cup mascarpone cheese = 3/4 cup cream cheese beaten with 1/4 cup heavy whipping cream (35%)
or
1 cup mascarpone cheese = 1 cup cream cheese

Milk, fresh whole
1 cup fresh whole milk = 1 cup reconstituted dry milk plus 2 teaspoon butter

Milk, sour
1 cup sour milk = 1 tablespoon lemon juice or vinegar plus enough sweet or fresh milk to make one cup

Milk, buttermilk (sour milk)
1 cup buttermilk =1 tablespoon lemon juice or vinegar (white or cider) plus enough milk to make 1 cup (let stand 5-10 minutes)
or
1 cup buttermilk =1 cup plain
or
1 cup buttermilk = 1 cup low fat yogurt
or
1 cup buttermilk = 1 cup sour cream
or
1 cup buttermilk = 1 cup milk plus 1 1/2 - 1 3/4 teaspoons cream of tartar

Milk Chocolate
Milk Chocolate = equal amount of bittersweet chocolate
or
Milk Chocolate = equal amount of semi-sweet chocolate plus 1 tablespoon granulated white sugar
or
2 ounces Milk Chocolate = 1 ounce sweet dark chocolate and 1 ounce white chocolate

Milk, evaporated whole
1 cup evaporated whole milk = 1 cup half & half (10-12%)
or
1 cup evaporated whole milk = 1 cup light or table cream (20%)
or
1 cup light (30%) or heavy whipping cream (35%)

Milk, skim (non fat)
1 cup skim milk = 1/4 cup powdered skim milk plus 7/8 cup water
or
1 cup skim milk = 1/2 cup evaporated skim milk plus 1/2 cup water

Milk, whole
1 cup whole milk = 1 /2 cup evaporated milk plus 1/2 cup water

Mint
Mint = equal amount of basil
or
Mint = equal amount of marjoram 
or
Mint = equal amount of rosemary

Molasses
1 cup molasses = 1 cup honey
or
1 cup molasses = 1 cup dark corn syrup
or
1 cup molasses = 1 cup maple syrup
or
1 cup molasses = 3/4 cup light or dark brown sugar heated to dissolve in 1/4 cup liquid

Mustard, dry
1 teaspoon dry mustard = 1 tablespoon prepared mustard

Mustard, prepared
1 Tablespoon prepared mustard = 1/2 teaspoon dry mustard plus 2 teaspoons vinegar

Nutmeg
1 teaspoon nutmeg = equal amount of cinnamon
or
1 teaspoon nutmeg = ginger
or
1 teaspoon nutmeg = mace
or
1 teaspoon nutmeg = 1 teaspoon ground allspice or
or
1 teaspoon nutmeg = 1 teaspoon ground cloves

Oats, quick-cooking rolled
1 cup quick-cooking rolled oats = 1 cup regular (old fashioned rolled oats)

Oil
1 cup oil = 1 cup melted butter
or
1 cup oil = margarine
or
1 cup oil = shortening

Orange, zest
1 teaspoon orange zest = 1 teaspoon lemon
or
1 teaspoon orange zest = lime zest
or
1 teaspoon orange zest = 1 teaspoon finely chopped candied orange peel

Oregano
Oregano = equal amount of thyme
or
Oregano = equal amount of basil

Parsley
Parsley = equal amount of cilantro

Pecans
Pecans = Equal amount of kasuy

Vim uses kasuy in her cookies and brownies when she can’t find any pecans. It can also be substituted for other hard to find nuts such as almonds, walnuts, macadamia.

Pimiento = Equal amount of roasted bell pepper

Potato
Potato = Equal amounts of Kamote

I also use kamote instead of potatoes for Adobo or Nilaga. The sweet taste of kamote enhances the taste of nilaga's soup and also, neutralizes the saltiness of Adobo's soy sauce.

 

Polenta, dry
1 cup dry polenta = 1 cup cornmeal
or
1 cup dry polenta = 1 cup maize meal
or
1 cup dry polenta = 1 cup corn grits

Pumpkin Pie Spice
1 teaspoon pumpkin pie spice = 1/2 teaspoon ground cinnamon plus 1/4 teaspoon ground ginger plus 1/8 teaspoon ground nutmeg plus 1/8 teaspoon ground cloves
